Cloyd’s Peach Fry Bread
1 29 oz. can of Peaches in heavy syrup. Recipe can use smaller (14 oz.) can of peaches, just cut other ingredients in half.
3 C. White Sugar.
3 Tablespoons of Baking Powder. (If you want the Fry Bread really fluffy, add 4 tablespoons of baking powder).
1 Teaspoon of Salt.
4 or more cups of Flour. You need to make a stiff dough so add small amounts of Flour to the mix until dough will not stick to your hands when handled.
1. Crush Peaches into very small pieces with a fork. This is the liquid for the mix.
2. Mix together sugar, flour, baking powder and salt in a large bowl, then add the squished peaches and mix well.
3. Add flour in small amounts until you make a stiff dough that doesn’t stick to your hands when handled.
4. When ready to cook, pinch off small balls of dough then flatten them with your hands until you make a palm sized patty under one half inch thick.
You can deep fry the patties in oil like a donut.. Make the oil almost smoking hot then CAREFULLY drop the patty into the oil.. Turn once or twice, or until both sides are golden brown.
You can “shallow fry” the patties in a skillet with one half to three quarters of an inch of oil in the skillet. Turn once or twice, or until both sides are golden brown.
You can “dry bake” the patties in a skillet with a wood fire in several ways. LIGHTLY dust the patties with flour then either place them in a skillet and flip to cook both sides. Place in a skillet and cover with a pie pan then place coals on top to bake. Watch closely so it doesn’t burn.
You can also make a PLAIN FRY BREAD for eating with stews or just for fast bread by combining:
3 C. of Flour.
1 Tablespoon of Baking Powder.
1 – 2 Teaspoons of Salt.
Add water to make a stiff dough that will not stick to your hands when working it into patties about palm sized and no more than one half of an inch thick. Then fry either in a skillet or deep fry it like peach fry bread. You can also cook it on a stick or a grill over a fire. I personally like frying it in a skillet when I am camping using saved bacon grease or coconut oil (it doesn’t seem to go bad in my pack). Cook until golden brown on both sides.
