I bought this along with the rest of the new attachments. High low sticks, coal tray, sumo stand and the stainless top. I bought the carbon steel model. I cook with this type of pan often and know the properties. I am happy to say this case the pan also performs just as well as other carbon steel in terms of the surface. This really is heavy though so when you get this you are really saying the size is what you are after. I have no other pan this small that can perform this well given the size of it stored away. I have the Firebox large 10 inch pan for larger projects.
